Sweet Potato Fish & Chip Shaped Biscuits

Ingredients
1 sweet potato
1 tsp ground cinnamon
1 tbsp coconut oil
1 cup of spelt flour

Plus two different sized round cookie cutters

METHOD

Preheat the oven to 180C/160C fan/gas 4 and line a baking tray with non-stick baking paper.

Prick the sweet potato all over with a fork, place in the oven and cook on high for 30 minutes or until the potato is soft.

In a bowl shift together the flour and cinnamon. Once the potato has cooled down, scoop out the flesh and add to the flour and spice mix.

Add the coconut oil and using your hands start to combine the ingredients to form a firm dough, adding water if the mix is to dry.

Lightly flour a clean surface and using a rolling pin roll the dough to the same thickness as a pound coin.

Now here comes the fun part, cut your dough into thirds. With one third of your dough use the larger of your two round cutters to start cutting out circles (these will form your fish body). Next using the smaller round cutter cut out more circles (these will be the fish tails). To make the fish tails cut the smaller circles in half using your smaller round cutter. Once cut, start constructing your fish.

With the last third of your dough cut into strips for the chips.

Place the cut cookies onto the lined baking tray making sure to leave 1cm gap between each biscuit.

Bake in the oven for 15-20mins or until golden and firm.

Transfer to a wire rack and leave to cool.

Please make sure the treats are completely cool before giving to your dog!
