Ingredients
1 Banana (mashed)
1 tbsp of applesauce (we use an option with no added sugar)
2 eggs
2 tbsp of coconut flour
1 tsp of cinnamon

Method

In a bowl whisk the eggs and then add the mashed banana and apple sauce and mix

Stir in the flour and cinnamon and whisk to a smooth batter

Set aside the mixture for a couple of minutes to allow the flour to rehydrate. If the mixture feels to dry add a little water. However coconut flour is particularly absorbent, and a very small amount of flour will absorb a very large amount of liquid.

Heat a frying pan over a medium heat and carefully wipe it with some oil kitchen paper (we used coconut oil).

When hot add a table spoon of your mixture to the pan and cook on either side until golden.

Once cooked transfer to a plate to cool while you continue with the rest of the mixture.

Wait until the pancake is completely cooled before giving to your dog. While your dog can’t enjoy lemon and sugar or chocolate on their pancakes, here are a few things that make great toppings;

• A dollop of peanut butter
• A small drizzle of honey
• Chopped banana, blueberries and/or apples (with seeds and cored removed)

Remember these pancakes are a treat so one pancake is probably enough, and the rest can be kept in the fridge or freezer for another day.
